Cake and cupcakes can be far too heavy for a summer dessert. While ice cream is great to cool you down, (for me) it’s not satisfying. I came across this recipe but unfortunately NO ONE sells a 10″ cake pan. [When you find one, point it out to me, because I went into three different stores, including Bed Bath & Beyond.]
I digress.
One of my favorite bakers, Apt. 2B Baking Company, modified this recipe into something a little easier and more accessible. It’s delicious.

*you can sub Buckwheat flour with more All-purpose flour
Apt. 2B suggested that I serve macerated strawberries on the side and, of course, I followed her advice. The following recipe used balsamic vinegar so I used my strawberry infused vinegar and that only made it more delightful.
